Here is a birthday cake that the kids love. We have had several kinds of birthday cakes, fancy ones from the bakery, but after I baked this one the first time, the kids want it again and again. We have 5 children birthdays per year.

It is very easy. You don’t need to be an artist to get this cake perfect. I have this recipe from Iceland. My mother-in-law used to bake this cake when my husband was a child.

  • 800g icing sugar

  • 160ml milk

  • 2 teaspoons vanilla essence

  • Preheat oven to 180 degrees C (350 degrees F)

  • Grease and flour two nine inch round pans

  • In a large bowl, stir together the butter, sugar, flour, cocoa, baking powder, baking soda and salt

  • Add the eggs and water, mix for 2 minutes on medium speed of mixer

  • Pour evenly into the prepared pans

  • Bake 20 to 25 minutes in the preheated oven, until the cake tests done with a toothpick

  • Cool in the pans for 10 minutes, then remove to a wire rack to cool completely

  • In a large bowl, stir together the icing sugar and cocoa

  • Add the melted butter, milk and vanilla

  • Mix until smooth on medium speed of mixer

  • Remove the cakes from the pans

  • If something gets stuck and breaks, don’t worry, you will hide it with the frosting

  • Put the frosting on top of one cake by using a knife

  • Put the second cake on top

  • Cover the cake on top and on side with frosting carefully with a knife

  • Now you can decorate the cake with m&m’s
