Here is a birthday cake that the kids love. We have had several kinds of birthday cakes, fancy ones from the bakery, but after I baked this one the first time, the kids want it again and again. We have 5 children birthdays per year.
It is very easy. You don’t need to be an artist to get this cake perfect. I have this recipe from Iceland. My mother-in-law used to bake this cake when my husband was a child.

Ingredients for the cake
200g Soft Butter (0.9 cups)
300g Flour (2.6 cups)
400g sugar (2 cups)
3 eggs
35g cocoa unsweetened (1.2 oz)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
250 ml water (1 cup)
Ingredients for the frosting
180g melted butter (3/4 cups)
100g cocoa unsweetened
800g icing sugar
160ml milk
2 teaspoons vanilla essence
Directions
Preheat oven to 180 degrees C (350 degrees F)
Grease and flour two nine inch round pans
In a large bowl, stir together the butter, sugar, flour, cocoa, baking powder, baking soda and salt
Add the eggs and water, mix for 2 minutes on medium speed of mixer
Pour evenly into the prepared pans
Bake 20 to 25 minutes in the preheated oven, until the cake tests done with a toothpick
Cool in the pans for 10 minutes, then remove to a wire rack to cool completely
In a large bowl, stir together the icing sugar and cocoa
Add the melted butter, milk and vanilla
Mix until smooth on medium speed of mixer
Remove the cakes from the pans
If something gets stuck and breaks, don’t worry, you will hide it with the frosting
Put the frosting on top of one cake by using a knife
Put the second cake on top
Cover the cake on top and on side with frosting carefully with a knife
Now you can decorate the cake with m&m’s
